The description relates to a process for producing cheese, curd or yoghourt products from soya beans involving the steps; (a) preparation of soya milk from soya beans; (b) addition of vegetable sugar to the soya milk in the proportion of 1 to 5 wt %; (c) emulsifying vegetable fats and/or oils in a total proportion of some 15 wt % in the soya milk; (d) preparation of a culture cocktail with a pH between 3.8 and 4.5 by the addition of commercially available cheese cultures and animal lactose in a proportion of some 10 wt % of the vegetable sugar added in step (b) to the soya milk as in step (a); (e) addition of the culture cocktail to the soya milk as per step (c) to curdle it and ferment it as desired, and (f) subsequent ripening and final processing in the prior art manner to provide the desired cheese, curd or yoghourt product.

Procédé pour produire du fromage, du fromage blanc et des yaourts à partir de soja, comprenant les étapes suivantes: (a) on prépare du lait de soja à partir de soja; (b) on ajoute, au lait de soja, du sucre d'origine végétale dans une proportion d'environ 1 à 5 % en poids; (c) on émulsifie les graisses végétales et/ou les huiles végétales dans une proportion totale d'environ 15 % en poids dans le lait de soja; (d) on prépare un cocktail de cultures avec un pH compris entre 3,8 et 4,5 environ, en ajoutant au lait de soja obtenu selon l'étape (a) des cultures de fromage courantes ainsi que de la lactose animale dans une proportion d'environ 10 % en poids du sucre d'origine végétale ajouté à l'étape (b); (e) on ajoute le cocktail de cultures au lait de soja selon l'étape (c) afin de faire cailler ce dernier et éventuellement de le faire fermenter; et (f) on procède ensuite à une maturation et un traitement final de façon connue pour obtenir le fromage, fromage blanc ou yaourt désiré.
