This invention describes the protection of meat products against Listeria monocytogenes by treating casing with a bacteriocin, nisin, and the antioxidant erythorbate containing shirring solution, wherein the meat product incorporates a bacteriostatic agent of potassium or sodium salts of diacetic acid or lactic acid and wherein the particle size of nisin is much smaller than that found commercially.
