The present invention is related to a fibre composition comprising 30 to 75 weight % of polysaccharide and 5 to 45 weight % of oligosaccharide, based on the total of the fibre composition being 100 weight % as a component of a functional food ingredient, which replaces sugar on a 1/1 weight and/or volume basis in food recipes containing sucrose, with a substantial caloric reduction in view. More than an ingredient, it has to be seen as a functional ingredient, since it possesses some health promoting effects. The functional food replacement for sucrose comprises prebiotic fibres and sweeteners, and possibly other non selective fibres, minerals, vitamins and probiotic strains.

La présente invention a pour objet une composition de fibre comportant de 30 à 75 % en poids de polysaccharide et de 5 à 45 % en poids d'oligosaccharide, basé sur le total de la composition de fibre qui sert à 100 % en poids comme composant d'un ingrédient alimentaire fonctionnel, qui remplace le sucre sur une base 1/1 en poids ou en volume dans des recettes contenant du sucrose, avec une réduction substantielle des calories recherchée. Plus qu'un ingrédient, on a montré que c'est un ingrédient fonctionnel, puisqu'il possède certains effets bénéfiques pour la santé. Ce substitut alimentaire fonctionnel au sucrose comprend des fibres prébiotiques, des édulcorants et, possiblement, d'autres fibres, des minéraux, des vitamines et des souches probiotiques non sélectives.
