A recycling cooking oven (10) providing a substantially closed environment, includes a thermal plenum (20), for supplying a stream of hot air into a cooking chamber (22) and for receiving a stream of hot air from the cooking chamber, the thermal plenum (20) maintaining a reservoir of hot air therein. The cooking chamber (22) of the oven supplies a stream of hot air into the thermal plenum (20) and receives a stream of hot air from the thermal plenum, the cooking chamber (22) cooking foods therein at least partially with a stream of hot air and such foods adding oxidizable components to the hot air of the stream. A blower (24) and ducting (26) cause the stream of hot air to circulate in substantially a continuous travel path including the thermal plenum (20) and the cooking chamber (22). A catalytic converter (50) is disposed in the travel path of the stream of hot air, downstream of the cooking chamber (22) and upstream of the thermal plenum (20), for flamelessly oxidizing oxidizable components in the hot air of the stream leaving the cooking chamber (22), thereby both to remove them from the hot air of the stream and to release at least some additional heat energy into the hot air of the stream.

L'invention concerne un four (10) de cuisson recyclable présentant un environnement sensiblement fermé, qui comporte une chambre (20) thermique servant à envoyer un flux d'air chaud dans une chambre (22) de cuisson, et à recevoir un flux d'air chaud provenant de la chambre de cuisson, l'intérieur de la chambre (20) thermique permettant de maintenir un réservoir d'air chaud. La chambre (22) de cuisson du four produit un flux d'air chaud en direction de la chambre (20) thermique, et reçoit un flux d'air chaud provenant de la chambre thermique; la chambre (22) de cuisson permet de cuire des aliments au moins partiellement à l'aide d'un flux d'air chaud, ces aliments ajoutant des composants oxydables au flux d'air chaud. Un dispositif de soufflerie (24) et de conduit (26) provoquent une circulation de l'air chaud suivant un trajet sensiblement continu comprenant la chambre (20) thermique et la chambre (22) de cuisson. Un convertisseur (50) catalytique est placé sur le trajet du flux d'air chaud, en aval de la chambre (22) de cuisson et en amont de la chambre (20) thermique, pour permettre d'oxyder sans flamme des composants oxydables présents dans l'air chaud du flux sortant de la chambre (22) de cuisson, ce qui permet à la fois d'éliminer ces composants de l'air chaud du flux, et d'apporter au moins un peu d'énergie thermique supplémentaire dans le flux d'air chaud.
