A process for manufacturing meat chunks which comprises: - chopping and heating a mixture of meat material, water and konjac in order to get a heated meat emulsion, - adding an alkali agent to the emulsion for raising the pH of the emulsion, - gelifying the emulsion by further heating the emulsion, and - dicing the gelled emulsion into chunks.
