A variant of Trichosporonoides oedocephalis having characteristics of achieving a higher yield of erythritol on the basis of sugar and a lower cell productivity, each than that of the parent strain, at a sugar concentration of 30 W/V % or above but less than 60 W/V %; and a process for producing erythritol which comprises incubating the variant in a medium having a sugar concentration of from 20 to 50 W/V % and taking up the erythritol thus accumulated in the medium. Thus, erythritol can be efficiently produced on an industrial scale with the use of the strain having a high erythritol productivity.

On décrit un variant de Trichosporonoïdes oedocephalis présentant des caractéristiques permettant d'obtenir un rendement plus élevé d'érythritol, sur la base du sucre et d'une productivité moindre des cellules, que celui obtenu avec une souche parentale, la concentration en sucre étant de l'ordre de 30 pds/vol % ou davantage tout en étant inférieure à 60 pds/vol %. On décrit également un procédé de production d'érythritol consistant à faire incuber le variant dans un milieu présentant une teneur en sucre de l'ordre de 20 à 50 pds/vol %, puis à récupérer l'érythritol ainsi accumulé dans ce milieu. On peut ainsi produire de l'érythritol, de manière efficace et à l'échelle industrielle, en utilisant la souche possédant produisant de forts rendements d'érythritol.
