Maltol is extracted from a source material containing maltol by employing an aqueous extraction process wherein reverse osmosis is utilized to concentrate an aqueous extract of maltol. The maltol in the concentrated aqueous extract is adsorbed on a bed containing an adsorbent material and then desorbed using a hydrophilic solvent and separated.

Le maltol est extrait d'un matériau source par un procédé d'extraction aqueuse, l'osmose inverse étant utilisée pour concentrer un extrait aqueux de maltol. Le maltol de l'extrait aqueux concentré est adsorbé sur un lit renfermant un matériau adsorbant, puis est désorbé à l'aide d'un solvant hydrophile et séparé de celui-ci.
