The invention is concerned with liposomes comprising a source of iron (II) in an aqueous solution microencapsulated and stabilized with a reducing agent capable of inhibiting the oxidation of iron (II) to iron (III). Processes for the preparation of such liposomes are also disclosed. The liposomes according to the invention make it possible to increase the level of bioavailable iron in ingestible substrates.
