Description

The present invention provides an apparatus and a method to recover fines from the fine particles contained in the whey removed during cheese production. The apparatus comprises a wedge wire screen assembly, doing the recuperation of the fine particles. The whey and fine particles mixture is first placed in an upper receptacle then fall in a lower receptacle from which they are recuperated for further processing. These elements are contained in the apparatus which is an enclosed area to protect the recuperated fine particles from contamination from the environment.
