The invention provides highly pure, endotoxin free methioninase compositions that have been prepared from natural material and from a recombinant host. The invention further provides methioninase that has been coupled to a polymer such as polyethylene glycol. The isolation of a methioninase encoding nucleic acid molecule and the generation of high expression vectors containing the methioninase encoding nucleic acid molecule is also provided.
