Yeast is transformed so that it is capable of expressing the enzymes phosphogluconate dehydratase and 2-keto-3-deoxygluconate 6-phosphate aldolase; whereby, in fermentation, a sugar can be converted to pyruvate via the Entner-Doudoroff pathway. Recombinant DNA encodes the enzymes defined above, and includes one or more sequences which promote transcription and translation of the enzymes in yeast.
La levure est transformée de façon à pouvoir exprimer les enzymes phosphogluconate déshydratase et 2-céto-3-désoxygluconate 6-phosphate aldolase; de ce fait, pendant la fermentation, on peut convertir un sucre en pyruvate par l'intermédiaire de la voie d'Entner-Doudoroff.
