A process for extracting carotenes from carotene-containing materials, in particular from fats and oils of biological origin, which provides for extraction of said carotene-containing material with an extractant comprising at least one member selected from the group consisting of acetonitrile, N- methylpyrrolidone, N,N-dimethylformamide, tetrahydrofuran, N,N- dimethylacetamide, furfurol, morpholine, 4-formylmorpholine, 4- acetylmorpholine, 4-methylmorpholine, 4-phenylmorpholine.

L'invention concerne un procédé permettant d'extraire des carotènes de matières contenant ces dernières, en particulier de graisses et d'huiles d'origine biologique. Dans ce procédé l'extraction des matières contenant la carotène est effectuée au moyen d'un solvant d'extraction comprenant au moins un composant sélectionné dans le groupe comprenant l'acétonitrile, la N-méthylopyrrolidone, N,N-diméthylformamide, tétrahydrofuranne, N,N-diméthylacétamide, furfurol, morpholine, 4-formylmorpholine, 4-acétylmorpholine, 4-méthylmorpholine, 4-phénylmorpholine.
