When overwintering plants are exposed to cold temperatures, they accumulate specific proteins, such as antifreeze proteins, that help the plants to survive exposure to subzero temperatures. We describe methods for inducing the accumulation of cold-regulated proteins, such as antifreeze proteins, in plants grown at warm temperatures. These methods include manipulation of growing and harvesting conditions and application of chemicals that increase levels of ethylene or initiate a signalling pathway similar to that of ethylene in the plants.
