ABSTRACT OF THE DISCLOSURE: This invention is concerned with a skinning machine for skinning fish fillets. This machine comprises a rotatable skinning roller provided in its circumferential surface with a plurality of depressions, a skinning knife provided with a serrated or sinuate cutting edge arranged at a uniform spacing from the circumferential surface of the roller, and a presser surface for pressing skin, severed from fillets by the knife, against the circumferential surface of the roller. Advantageously, the presser surface may be provided by a surface portion of the knife and the knife may be mounted to be pivotable against a spring force about an axis parallel to the axis of rotation of the roller, abutment means being provided to set a minimum spacing of the knife from the circumferential surface of the roller. Such a machine permits to prevent a splitting-up of the fillets in operation.
