The method consists in treating the said plants, before outbreak of frost, with a composition containing as protecting ingredient a sufficient amount of a hydroxamic acid derivative of formula or Image Image wherein R1 is alkyl, cycloalkyl, alkenyl or phenyl, R2 represents hydrogen or lower alkyl, R3 is hydrogen, alkyl, alkyl- or aryl-carbonyl, alkylcarbamoyl or a cation, and R4 is the same as R2 or alkyl- and arylcarbonyl.
