ABSTRACT OF THE DISCLOSURE A novel apparatus and method are provided for drying fish in the ambient atmosphere. The apparatus includes an upright framework adapted to be disposed within an enclosure. A generally prone or slightly sloped frame or flake is associated with the upright framework and is adapted to be disposed outside the enclosure in the ambient atmosphere. A roller mechanism is rotatably mounted in the upright framework. A mesh material is secured at one end to the roller mechanism and is adapted to be extended along the frame or flake and in the ambient atmosphere. Means are pro- vided for rotating the roller mechanism and the mesh material secured at one end thereto so that the mesh material can be disposed in an extended position atop the frame or flake, and a wound position on the roller mechanism within the enclosure. The method includes the steps of (i) spreading the fish to dry on a mesh material supported on a frame or flake exposed to ambient atmosphere, and connected to an upright framework adapted to be disposed within an enclosure, the mesh material being secured at one end to a roller mechanism; (ii) allowing the fish to dry initially during a first period of favourable atmospheric conditions; (iii) during subsequent periods of inclement unfavourable atmospheric conditions, winding the mesh material with the fish still thereon, onto the roller within the enclosure; and (iv) during subsequent periods of favourable atmospheric conditions, withdrawing the mesh material with the partially dried fish thereon, and supporting the withdrawn mesh material on the frame or flake.
