ABSTRACT OF THE DISCLOSURE The present invention provides a process for producing starch hydrolysis products which have a low dextrose equivalent (DE) and form thermally reversible gels with water which comprises admixing high-molecular weight and low-molecular weight starch products, the average degree of polymerization of which differs by at least a power of ten, in a weight ratio such that the weight of the low-molecular weight component is preponderant.
