ABSTRACT OF THE DISCLOSURE The natural fresh flavor of a foodstuff is enhanced by the incorporation of an aldehyde therein to replace or supplement the aldehyde which occurs naturally in said food- stuff, the aldehyde being added in the form of an aldehyde generator selected from the group consisting of (a) linear acetals of the general formula: Image (I) wherein in general R is a multivalent hydrocarbon radical of 2 to 6 carbon atoms, which is uninterrupted or interrupted by an ether linkage; R1 is a hydrocarbon radical having 1 to 12 carbon atoms, and R2 is a hydrocarbon radical of 1 to 7 carbon atoms, n is an integer equal to or less than the valence of R but at least 2, with certain provisoes and b) vinyl ethers of the general formula: R3O(O-CH=CH-R4)m (II) wherein R3 is a multivalent hydrocarbon radical of 3 to 5 carbon atoms, m is an integer equal to or less than the valence of R3, but at least 1, and when m is less than the valence of R3, the remaining valences of R3 are satisfied by functional groups selected from the group consisting of alkoxy, hydroxyl, acyloxy, acetal groups, ketal groups and a divalent radical of formula: Image wherein R1 is a hydrocarbon radical having 1 to 12 carbon atoms, the aldehyde generator being capable of liberating the desired aldehyde at the conditions of use.
