METHOD FOR SYNTHESIS OF 2-HYDROXY-3-METHYL CYCLOPENT-2-ENE-l-ONE ABSTRACT OF THE DISCLOSURE The known compound 2-hydroxy-3-methyl cyclopent-2- ene-l-one, used as a flavor imparting agent and commonly called maple lactone, is synthesized by a modifed acyloin condensation of esters of 2-methyl glutaric acid in which oxygen is introduced to the reaction system after the ester reactant has been combined with an alkali metal, e.g. sodium, in a solvent, e.g. liquid ammonia.
