ABSTRACT This application discloses a method of sterilization of open-top packages adapted to being filled with dairy prod- ucts and the like, wherein the interior of each container is sprayed with a predetermined concentration of chlorine dioxide in the form of a fog.- The fog is given time to adhere to the walls of the container prior to being heated to activate the chlorine dioxide. After the heating opera- tion, the interior is sprayed with an aqueous solution of an edible organic acid to react with the chlorine dioxide and complete the sterilization process.
