The present invention relates to compositions and methods for inhibiting nonenzymatic cross-linking (protein aging). Accordingly, a composition is disclosed which comprises a substituted 1,2,4-triazine of formula (I) and the biologically and pharmaceutically acceptable salts thereof; capable of inhibiting the formation of advanced glycosylation endproducts of target proteins. The method comprises contacting the target protein with the composition. Both industrial and therapeutic applications for the invention are envisioned, as food spoilage and animal protein aging can be treated.

La composition décrite comprend une 1,2,4-triazine substituée de la formule (I) et ses sels biologiquement et pharmaceutiquement acceptables, qui peuvent inhiber la formation des produits définitifs de la glycosylation avancée de protéines cibles. Ce procédé consiste à mettre la protéine cible en contact avec la composition. Des applications tant industrielles que thérapeutiques sont envisagées pour cette invention, dans la mesure où elle permet de traiter aussi bien la dégradation des aliments que le vieillissement des protéines animales.
