A 1,3-specific lipase originating in Rhizomucor miehei which is in the form of a lipase powder having a spherical shape and a moisture content of 10% by mass or lower; a lipase composition in which this lipase powder is dipped in fat or infiltrated thereby; and a method of producing a lipase powder which comprises spray drying a lipase-containing aqueous solution having a pH value adjusted to 6 to 7.5. Thus, a lipase powder having improved 1,3-selectivity is provided.

Il est prévu une lipase 1,3-spécifique provenant de Rhizomucor miehei sous forme de poudre de lipase de forme sphérique et d~une teneur en humidité inférieure ou égale à 10 % en masse ; une composition de lipase dans laquelle on trempe cette poudre de lipase dans la graisse ou l~on infiltre ladite poudre de cette manière ; et un procédé de fabrication de poudre de lipase comprenant un séchage par pulvérisation d~une solution aqueuse contenant une lipase ayant une valeur de pH ajustée de 6 à 7,5. Ainsi, on obtient une poudre de lipase de sélectivité 1,3 améliorée.
