Abstract: This application relates to 2-acyl-5-substituted thiatetrahydrofuran-4-ones having the generic structure which is in the alternative one of the structures: Image or Image wherein R1, R2, R? and R? are the same or different and each represents hydrogen or methyl and wherein R3 represents one a furfuryl having the structure: Image ; - 2 - substituted furfuryl having the structure: Image wherein R9 and R10 are the same or different lower alkyl, methyl, ether, n-propyl, i-propyl, n-butyl, or i-butyl, C1-C9 alkyl, benzyl, phenyl, substituted or unsubstituted allyl having the structure: Image substituted or unsubstituted 3-furyl having the structure: Image (wherein R4 and Ra are the same or different and each represents hydrogen or methyl) hydroxy alkyl, oxoalkyl, hydroxycycloalkyl or oxocycloalkyl having the structure: Image - 3 - (wherein R5 and R6, taken separately, represent hydrogen or C1-C3 alkyl or R5 and R6, taken together, complete a cycloalkyl group and wherein Q is one of the moieties: Image or Image )' prepared either (I), according to the process of dimerizing one or more alpha, beta-alkane dione(s) to form one or more alpha, beta-alkane dione dimer(s) having the structure: Image and reacting the said alkane dione dimer(s) in acidic medium and in the presence of a solvent with a mercaptan, having the structure: R3SH or (II) reacting equimolar amounts of one or more C4-C6 .alpha.,.beta.- alkane dione compounds and organic mercaptans of the formula R3SH to form a first reaction product having the structure: Image - 4 - and then reacting said first reaction product with another equimolar amount of one or more C4-C6 .alpha.,.beta.-alkane dione compounds which are the same or different from those used to react with the organic mercaptan. The compounds prepared according to the foregoing process and having the foregoing generic structures are useful in augmenting or enhancing the aroma or taste of foodstuffs. - 4(a) -
