The present invention relates to 4S-iota-carrageenan sulfatase and to the use thereof for partially or totally converting the iota-carrageenan into iota-/alpha-carrageenan or alpha-carrageenan. The invention also relates to the method for extracting said enzyme from a Pseudoalteromonas bacteria population or from red marine algae. Finally, the present invention relates to the use of 4S-iota-carrageenan sulfatase to prepare a texturizing agent containing alpha-carrageenan.
La présente invention a pour objet la 4S-iota-carraghénane sulfatase et son utilisation pour la conversion partielle ou totale du iota-carraghénane en iota-/alpha- carraghénane ou en alpha-carraghénane. Elle a également pour objet le procédé d'extraction de cette enzyme à partir d'une population bactérienne Pseudoalteromonas, ou bien à partir d'algues rouges marines. Enfin, la présente invention concerne l'utilisation de la 4S-iota-carraghénane sulfatase pour la préparation d'un agent de texture comprenant de l'alpha-carraghénane.
