Ce procédé consiste à mettre en contact un milieu liquide contenant au moins un hexose, par exemple du fructose avec un catalyseur solide constitué par un tectosilicate ou une argile non fonctionnalisé par des groupes acides, par exemple une zéolithe sous forme protonique telle qu'une mordénite H. On peut aussi extraire le HMF formé au moyen d'un solvant organique tel que la méthylisobutylcétone dans une installation d'extraction à contre-courant.
