The invention can realize normal fermentation during fermentation period, raw material decomposition, nourishing constituents intensification, yeast growth acceleration and enduring contrary protect.

L'invention concerne une levure composite adaptée à la fermentation d'alcool en concentration élevée, comprenant une levure de vin stable thermiquement, une protéase acide, une phytase, une cellulase, une .beta.-glucanase et une pectinase, ladite levure composite permettant la fermentation alcoolique en concentration élevée de diverses matières brutes. La levure selon l'invention permet d'effectuer une fermentation normale pendant la durée de fermentation, une décomposition des matières brutes, une intensification des constituants nutritifs, une accélération de la croissance de la levure, et d~obtenir une auto-limitation de la fermentation.
