A device for separating bone material from meat tissue in a meat piece, such as a spine from a half part of a slaughtered animal, which device is provided with a support for the meat piece for processing and a separating member with a curved separating edge which is movably driven relative to the support and consists of plate material, wherein the separating edge is provided with a series of teeth, each of which is embodied with a guide surface directed toward the inner side of the bend such that when bone material is severed it is carried away to the inside and contamination of the meat material is thereby avoided.
Dispositif de séparation de matières osseuses d'une pièce de viande, comme la colonne vertébrale d'une moitié d'animal abattu. Ce dispositif est muni d'un support pour la pièce de viande aux fins de traitement, ainsi que d'un élément de séparation présentant un bord de séparation courbé qui est entraîné en lien avec le support et qui est constitué d'une plaque. Le bord de séparation est doté d'une série de dents faisant chacune corps avec une surface guide dirigée vers le côté intérieur de la courbe, afin que les matières osseuses soient acheminées vers l'intérieur après avoir été disjointes. On peut ainsi éviter une contamination de la viande.
