A flowable nondigestible oil composition having a Consistency in a temperature range of 20 ~C to 40 ~C of less than about 600 P.sec(n-1), preferably less than about 400 P.sec(n-1). The flowable nondigestible oil contains a liquid polyol polyester having a complete melt point less than 37 ~C, and a solid polyol polyester having a complete melt point of at least about 37 ~C. The solid polyol polyester can be a solid saturated polyol polyester, a solid diversely esterified polyol polyester, a polyol polyester polymer, or a combination thereof, which are crystallized, or co-crystallized, into unaggregated crystal particles of typically less than 10 microns in maximum dimension. The flowable nondigestible oil is made by a process which includes the steps of melting completely the nondigestible oil, crystallizing the solid polyol polyester while applying shear to avoid formation of clusters of crystallized aggregates which can prevent the composition from being flowable. A preferred equipment for crystallizing the solid polyol polyester to form the flowable composition is a scraped wall heat exchanger.
Cette invention se rapporte à une huile fluide non digestible possédant, dans une plage de températures comprise entre 20 ·C et 40 ·C, une consistance inférieure à environ 600 P.sec?(n-1)¿, de préférence inférieure à 400 P.sec?(n-1)¿. Cette huile fluide non digestible contient un polyester de polyol liquide doté d'un point de fusion totale inférieur à 37 ·C, et un polyester de polyol solide doté d'un point de fusion totale supérieur ou égal à 37 ·C environ. Le polyester de polyol solide peut être un polyester de polyol saturé solide, un polyester de polyol diversement estérifié, solide, un polymère polyester de polyol ou une combinaison de ces derniers, qui sont cristallisés, ou co-cristallisés, en particules cristallines non agglomérées, dotées généralement d'une dimension maximale inférieure à 10 microns. Le procédé de fabrication de cette huile fluide non digestible consiste à faire fondre totalement l'huile non digestible, à faire cristalliser le polyester de polyol solide tout en appliquant une force de cisaillement de façon à éviter la formation de groupes d'agrégats cristallisés qui peuvent nuire à la fluidité de la composition huileuse. Un équipement préféré de cristallisation du polyester de polyol solide, utilisé pour la fabrication de la composition fluide, est un échangeur thermique à parois raclées.
