A chemical cleaning system and a method of mechanical warewashing using same is described. The system contains at least two separate components for aqueous dissolution or dilution to respective use concentrations, a cleaning agent and an enzyme. Substantially no added bleaching agent is present in the system and a pH of an aqueous solution of the cleaning agent must be more alkaline than an aqueous solution of the enzymatic component by at least 1 pH unit.

On décrit un système de nettoyage chimique ainsi qu'un procédé mécanique de lavage industriel de vaisselle dans lequel ils sont utilisés, le système est composé d'au moins deux constituants séparés, destinés à une dissolution ou à une dilution aqueuse à des concentrations d'utilisation respectives, d'un agent nettoyant ainsi que d'une enzyme. Ce système ne comporte pratiquement pas d'agent de blanchiment et le pH d'une solution aqueuse de l'agent nettoyant doit être plus alcalin d'au moins une unité pH que celui d'une solution aqueuse du constituant enzymatique
