Selon l'invention, on utilise une souche atypique de Bacillus subtilis provenant d'une boisson mexicaine, le Pozol, pour lutter contre les moisissures et autres flores détériorantes, présentes dans diverses matières, notamment dans des aliments comprenant la pâte à pain, les omelettes, les grains mouillés et le fromage. On peut utiliser cette souche de Bacillus subtilis sous forme vivante ou non, dans lesdites matières, lesquelles peuvent comprendre des emballages alimentaires.
