During the commercial production of dextrose from starch, the disaccharide maltulose is produced which cannot be hydrolysed by the enzymes amyloglucosidase, pullulanase or .alpha.-amylase. The present invention discloses an enzyme preparation for the hydrolysis of maltulose. Enzymatic hydrolysis of maltulose provides a new and additional method for improvement of the monosaccharide levels in the saccharification of starch.

Dans la production commerciale de dextrose à partir d'amidon, il y a formation de maltulose de disaccharide qui ne peut pas être hydrolysée par les enzymes que sont l'amyloglucosidase, la pullulanase ou l'.alpha.-amylase. La présente invention concerne une préparation d'enzyme destinée à hydrolyser la maltulose. L'hydrolyse enzymatique de la maltulose constitue un procédé nouveau et supplémentaire d'amélioration des teneurs en monosaccharides dans la saccharification de l'amidon.
