The object of the present invention is a novel transformation process of fruits and vegetables for manufacturing industrial derivatives such as hypoallergenic juices, puree and concentrates, etc. mainly intended for individuals suffering from OAS (Oral Allergy Syndrome) following the consumption of traditional industrial derivatives, but also for general consumption to prevent sensitization in atopic patients. In a second aspect, the present invention also relates to the products obtainable by means of said process.

L'invention concerne un nouveau procédé de transformation de fruits et de légumes pour fabriquer des dérivés industriels tels que des jus, des purées et des concentrés hypo-allergéniques, principalement destinés à des personnes souffrant du syndrome d'allergie orale à la suite de la consommation de dérivés industriels classiques, mais aussi à la consommation en général de manière à prévenir l'allergisation chez des patients atopiques. Dans un second aspect, l'invention concerne également des produits que l'on peut obtenir par ledit procédé.
