Moist vegetable biomass (21) is fed (22, 24) to a mixing zone (26) equipped with stirring means (27) of a conditioning vessel (25). Aqueous juice (30) recycled (40) from a subsequent step (39) is also fed (29) to the mixing zone (26). The mixture is fed (32) to a processing apparatus (33) whose operation involves the generation of a gradient of flow speed within the flowing suspension, which opens cells of the vegetable biomass to liberate their content into the aqueous juice. A slurry (34) is produced that is fed to a separator (35) for partitioning into aqueous juice (36) and mush (37). The mush is removed (38). The aqueous juice is divided (39) into major (40) and minor (41) portions whose ratio provides for balance between water entering and leaving the process, considering that the major portion (40) is recycled to the mixing (26) zone and the minor portion (41) removed. Preferably, the ratio is greater than about 4:1. Preferably, the processing apparatus (33) has an effective shearing gap whose width is larger than 1 mm.
De la biomasse végétale humide (21) alimente (22, 24) une zone de mélange (26) de récipient de conditionnement (25) équipée de moyens d'agitation (27). Un jus aqueux (30), recyclé (40) dans une étape ultérieure (39), alimente (29) également la zone de mélange (26). Ledit mélange est fourni (32) à un appareil de traitement (33) dont le fonctionnement implique la génération d'un gradient de vitesse d'écoulement dans la suspension d'écoulement, les cellules de biomasse végétale s'ouvrant afin de libérer leur contenu dans ledit jus aqueux. On produit une bouillie (34) qui alimente un séparateur (35) destiné à séparer ladite bouillie en jus aqueux (36) et en pâte (37). On retire (38) ladite pâte. Le jus aqueux est divisé (39) en parties principale (40) et partie secondaire (41) dont le rapport permet d'équilibrer l'eau entrant et l'eau quittant le processus, compte tenu du fait que la partie principale (40) est recyclée dans la zone de mélange (26) et que la partie secondaire (41) est éliminée. Le rapport est, de préférence, supérieur à environ 4/1. L'appareil de traitement (33) possède un espace de cisaillement efficace dont la largeur est supérieure à 1 mm.
