The disclosure relates to a method of long shelf life packing of foods, in particular meat, in a flexible package of plastic, under such conditions that the atmosphere enclosed in the package substantially consists of pure oxygen gas (100 per cent O2). As a result of the elevated oxygen gas concentration inside the package, the method may be carried out employing economical, readily available plastic materials such as polyethylene, without jeopardising the shelf life of the packed food during the guaranteed storage time. The shelf life of the packed food will be further improved by subjecting the food to a bacteria-destruction treatment, for example an irradiation treatment according to the so-called "pulsed light" technique, before and/or in connection with the packing process proper.

Un procédé permet d'emballer des produits alimentaires à stockage de longue durée, en particulier de la viande, dans un emballage de plastique souple, dans des conditions telles que l'atmosphère enfermée dans cet emballage consiste pratiquement en de l'oxygène pur (100 % de O¿2?). Du fait de cette concentration élevée d'oxygène dans l'emballage, ce procédé peut s'utiliser avec des matières plastiques facilement disponibles et économiques telles que le polyéthylène sans risque afférent à la durée de stockage du produit alimentaire emballé pendant la durée de stockage garantie. Cette durée de stockage du produit emballé est encore allongée si on soumet ledit produit à un traitement destructeur de bactéries, par exemple un traitement par irradiation par la technique dite de la "lumière pulsée", avant et/ou pendant le processus d'emballage lui-même.
