The invention relates to a method of producing aseptic consumer milk with a certain fat content by microfiltration. A continuous flow of milk with a certain fat content passes through a microfilter with a membrane having a pore size of 0.05 - 0.2µm. In the microfilter, the milk is divided up into two part flows, a permeate flow and a retentate flow. The retentate flow, which contains fat and the major fraction of the casein, undergoes a high temperature treatment before being remixed with the permeate flow which contains the major fraction of the whey proteins. The mixture is homogenized and packed aseptically.
L'invention concerne un procédé de production, par microfiltration, de lait de consommation aseptique ayant une certaine teneur en matière grasse. Un débit continu de lait ayant une certaine teneur en matière grasse passe dans un microfiltre dont la membrane a une granulométrie comprise entre 0,05 et 0,2 mu m. Dans le microfiltre, le lait est divisé en deux débits, un débit de perméation et un débit de retentat. Le débit de retentat, qui contient la matière grasse et la fraction principale de la caséine, subit un traitement à température élevée avant d'être remélangé au débit de perméation qui contient la fraction principale des protéines du lactosérum. Ce mélange est homogénéisé et conditionné de manière aseptique.
