The present invention relates to a method of producing oligosaccharide syrups, in particular to the production of syrups having a high concentration of saccharides with a degree of polymerization of at least 2, comprising the steps of: enzymatic reaction of a substrate at a temperature in the range of 50 ~C to 100 ~C obtaining a saccharide solution comprising monosaccharides and disaccharides, trisaccharides and higher saccharides; nanofiltration of the saccharide solution at a temperature in the range of 60 ~C to 100 ~C obtaining a syrup essentially comprising disaccharides, trisaccharides and higher saccharides; recovering said syrup; optionally recycling the permeate resulting from the nanofiltration step to the enzymatic reaction.
La présente invention se rapporte à un procédé de fabrication de sirops d'oligosaccharides, notamment de sirops ayant une concentration élevée en saccharides avec un degré de polymérisation supérieur ou égal à 2. Ledit procédé consiste à soumettre un substrat à une réaction enzymatique à une température comprise entre 50 ·C et 100 ·C de façon à obtenir une solution de saccharides comportant des monosaccharides, des disaccharides, des trisaccharides et des saccharides d'ordre supérieur, à effectuer une nanofiltration de la solution de saccharides à une température comprise entre 60 ·C et 100 ·C de façon à obtenir un sirop contenant principalement des disaccharides, des trisaccharides et des saccharides d'ordre supérieur; à récupérer ledit sirop et à recycler éventuellement le perméat résultant de la nanofiltration en le réutilisant dans la réaction enzymatique.
