Provided is an isolated novel Gram-positive non-motile, non-spore-forming, aerobic bacterium designated Streptomyces scopuloiridis, wherein the bacterium produces a bacteriocin that kills or inhibits the growth of Gram-positive or Gram-negative target bacteria. Also provided are novel purified polypeptides, and fragments thereof, and isolated nucleic acids from the bacterium. Further provided are methods of using the bacterium and the purified polypeptides, and fragments thereof, to preserve food and prevent bacterial contamination of food.

L'invention porte sur une nouvelle bactérie isolée, aérobie, ne formant pas de spores, non motile, à Gram positif, appelée Streptomyces scopuloiridis. La bactérie produit une bactériocine qui détruit ou inhibe la croissance de bactéries cibles à Gram positif ou à Gram négatif. L'invention porte également sur de nouveaux polypeptides purifiés et des fragments de ceux-ci et des acides nucléiques isolés de la bactérie. L'invention porte également sur des procédés d'utilisation de la bactérie et des polypeptides purifiés, et des fragments de celui-ci, pour conserver les aliments et empêcher la contamination bactérienne des aliments.
