The present invention concerns a procedure and equipment for the treatment, such as anaesthetisation or killing, of poultry by using gas. The gas comprises oxygen and carbon dioxide, among other components. During the treatment, the oxygen concentration is kept constant at a normal level (18 - 22 vol.%). This is important as it allows the poultry to breathe normally while the natural body functions can be maintained in their normal state until anaesthetisation takes place. The concentration of carbon dioxide is increased either continuously or discontinuously. With the present invention it is possible to anaesthetise poultry before slaughter in a way which produces low levels of stress and discomfort in the poultry while, at the same time, the quality of the meat is better than with the use of traditional methods. In the equipment the poultry are exposed to the gas in a chamber (1), that may comprises a belt conveyer (5) and further be separated into three treatment zones (2, 3 and 4).

La présente invention se rapporte à un procédé et à un dispositif permettant le traitement, tel qu'anesthésie ou mise à mort, de volaille au moyen d'un gaz. Ledit gaz contient, entre autres éléments, de l'oxygène et du dioxyde de carbone. Au cours du traitement, la concentration d'oxygène est maintenue constante, à un niveau normal (18 à 33 % vol.) Ceci est important car la volaille peut ainsi respirer normalement tant que les fonctions corporelles naturelles peuvent être conservées dans leur état normal, jusqu'à ce que l'anesthésie se produise. La concentration de dioxyde de carbone est augmentée de manière continue ou de manière discontinue. Grâce à cette invention, il est possible d'anesthésier la volaille avant l'abattage, d'une manière minimisant les agressions et l'inconfort ressentis par la volaille, et d'améliorer simultanément la qualité de la viande en comparaison de celle produite conformément à des procédés traditionnels. Dans le dispositif de l'invention, la volaille est exposée au gaz dans une chambre (1) qui peut comporter un transporteur à courroie (5) et être en outre divisée en trois zones de traitement (2, 3 et 4).
