Improved process for preparing a kappa-caseino glycomacropeptide and derivatives thereof which comprises adjusting the pH of a solution of a milk starting material to below 4, cold ultrafiltration and concentration of the starting material on a spiral filter. This process is usable in industrial scale without fouling problems and without damaging the usable milk material by-product.
L'invention concerne un procédé amélioré de préparation d'un glycomacropeptide kappa-caséinique et de dérivés qui consiste à réduire au-dessous de 4 le pH d'une solution de matière première à base de lait, à traiter ladite matière première par ultrafiltration, et à concentrer ladite matière première sur un filtre en spirale. Ce procédé peut être utilisé à l'échelle industrielle sans risques d'encrassement et sans détérioration du sous-produit utile à base de lait.
