Described is a method of producing betaines and amphoteric surfactants with a reduced dichloroacetic acid content by adjusting the pH of the surfactants to the range 11 to 14 by the addition of alkali hydroxides and subsequently subjecting them to heat treatment, optionally under increased pressure. The products produced under these conditions are stable to hydrolysis and easy to bleach. Furthermore, the addition of preservatives to protect the surfactants from microbial attack is unnecessary.
