This invention relates to a process for the continuous boiling of wort, comprising feeding the unboiled wort to a wort heater, wherein it is heated to a temperature between 75 and 125 °C, introducing the heated wort in a plug flow reactor, preferably a rotating disc holding column, followed by treating the won obtained from said reactor in countercurrent with steam in a stripping column.

Procédé servant à porter le moût à ébullition en continu, et consistant à introduire le moût non bouilli dans un appareil de chauffage de moût dans lequel il est porté à une température comprise entre 75 et 125 ~C, à introduire le moût chauffé dans un réacteur à écoulement piston, de préférence dans une colonne de retenue à disque rotatif, puis à traiter le moût issu dudit réacteur à l'aide d'un contre-courant de vapeur d'eau dans une colonne de stripping.
