A process of extracting a composition comprising anthocyanins from black rice (Oryza sativa L) comprises separating an outer layer from a starchy endosperm in de-hulled black rice; adding a solution of at least one organic solvent and an acid to the separated outer layer; filtering and removing the solvent and the acid from the separated outer layer to produce a pigment fraction; separating constituents of the pigment fraction; and collecting the anthocyanin composition therefrom. This composition is useful in enhancing and/or preserving the stability of HDL-C and the atherogenic lipioproteins such as LDL-C, VLDL-C, and IDL-C from oxidation, in preventing, reducing, eliminating or ameliorating injuries due to oxidative stress, and in preventing, reducing, eliminating or ameliorating the development of atherosclerotic lesions and inflammation associated therewith.

L'invention concerne un procédé permettant d'extraire une composition à base d'anthocyanines du riz noir (Oryza sative L), qui consiste à séparer une couche externe d'un albumen amylacé dans le riz noir décortiqué; à ajouter à la couche externe séparée une solution d'au moins un solvant organique et un acide; à filtrer et à évacuer le solvant et l'acide de la couche externe séparée pour produire une fraction pigmentaire; à séparer les constituants de la fraction pigmentaire; et à en recueillir la composition d'anthocyanine. Ladite composition permet de renforcer et/ou de protéger de l'oxydation la stabilité du HDL-C et des lipoprotéines athérogènes tels que LDL-C, VLDL-C et IDL-C, d'empêcher, de réduire, d'éliminer ou d'amoindrir les accidents dus aux agressions de l'oxydation, et d'empêcher, de réduire, d'éliminer ou d'amoindrir le développement de lésions d'athérosclérose et d'inflammations associées.
