An aromatic vinegar is produced from wine or fruit vinegar and cooked or concentrated musts, by freeze concentrating the vinegar in a freeze concentration system (1) and mixing it together with concentrated must to obtain an aromatic vinegar with an acidity of at least 6 g/l and high sugar content without the addition of additives.

L'invention concerne un procédé de production de vinaigre aromatique est produit à partir de vinaigre de vin ou de fruit et des moûts cuits ou concentrés, dans lequel on soumet le vinaigre à la cryoconcentration dans un système de cryoconcentration (1) et on le mélange avec le moût concentré en vue d'obtenir un vinaigre aromatique présentant une acidité d'au moins 6 g/l et un contenu en sucre élevé sans ajout d'additifs.
