The present invention relates to a food composition which is shelf-stable, has a low acidic content in the range of pH3.7 to pH3.9, a water activity value (Aw) in the range of 0.6 to 0.9 and a salt content in the range of 13% to 22% by weight based on the total weight of liquid content. The present invention further relates to a process for the production thereof.

La présente invention porte sur une composition alimentaire qui a une longue conservation, qui a une faible teneur en acide dans la plage de pH 3,7 à pH 3,9, une valeur d'activité de l'eau (Aw) dans la plage de 0,6 à 0,9 et une teneur en sel dans la plage de 13 % à 22 % en poids sur la base de la masse totale de la teneur en liquide.
