The present invention provides a method for production of a spread, comprising the steps of: (a) two aqueous phases with different particle sizes in a fatty phase, of which at least one aqueous phase is dispersed into the fatty phase through a microporous membrane, to prepare a mixed water-in-oil type emulsion; (b) rapidly cooling the emulsion to plasticize;and (c) kneading the plasticized emulsion. According to the present invention, it is possible to produce a low-fat spread having good taste easily, which does not require a stabilizer or a gelling agent, is excellent in stability and preservativity on a level never achieved by any conventional methods.
La présente invention porte sur une méthode de production de tartinade, comprenant les étapes suivantes : a) réaliser deux phases aqueuses comportant des particules de dimensions différentes dans une phase grasse, dont au moins une phase aqueuse est dispersée dans la phase grasse à travers une membrane microporeuse, afin de préparer une émulsion mixte du type eau-dans-huile; b) refroidir rapidement l'émulsion pour plastifier, et c) malaxer l'émulsion plastifiée. D'après la présente invention, il est possible de produire facilement une tartinade à faible teneur en matières grasses, au goût agréable, qui ne demande ni stabilisant ni agent gélifiant, qui possède une stabilité et une durée de conservation excellentes, et ce, à un niveau jamais encore atteint au moyen des méthodes classiques.
