A whippable food product having improved stability characteristics without detectable change in the organoleptic characteristics is provided. The product comprises triglyceride fat, one or more sugars and an emulsifier component comprising destabilizing and stabilizing emulsifiers in amounts sufficient to stabilize the product. This product can be stored at ambient temperatures for extended periods of time and can also be whipped and displayed at ambient temperatures.

L'invention concerne un produit alimentaire à fouetter présentant des caractéristiques de stabilité améliorées sans changement détectable des caractéristiques organoleptiques. Le produit contient de la matière grasse à triglycérides, un ou plusieurs sucres ainsi qu'un constituant émulsifiant renfermant des émulsifiants déstabilisants et stabilisants dans des quantités suffisantes pour stabiliser le produit. Ce produit peut être stocké à température ambiante pendant des durées prolongées et il peut aussi être fouetté et présenté à des températures ambiantes.
