Various constructs that absorb exudates and optionally enhance browning and crisping of a food item during heating in a microwave oven are provided. In one embodiment there is provided an absorbent structure having a release layer for contacting a food item. The release layer contains a silicone, a chrome complex, a wax, or any combination thereof along with a liquid absorbing layer superposed with the release layer.
