An acidic oil-in-water type emulsion composition having a high diglyceride content. It is an acidic oil-in-water type emulsion composition which contains fats comprising at least 30 wt.% diglycerides and a yolk treated with an enzyme selected among esterases, lipases, and phospholipases, characterized by containing an antioxidant in an amount which is 1,000 to 10,000 ppm of the oil phase comprising the fats and is 0.4 to 4.5 in terms of weight ratio to the net amount of the yolk in the enzyme-treated yolk.

Cette invention se rapporte à une composition d'émulsion du type huile dans eau acide ayant une teneur élevée en diglycérides. Cette composition d'émulsion du type huile dans eau acide contient des graisses constituées par au moins 30 % en poids de diglycérides et du jaune d'oeuf traité par une enzyme choisie parmi des estérases, des lipases et des phospholipases, cette composition se caractérisant en ce qu'elle contient un antioxydant en une quantité représentant 1000 à 10 000 ppm de la phase huileuse comprenant les matières grasses et 0,4 à 4,5 en termes de rapport en poids à la quantité nette de jaune d'oeuf dans le jaune d'oeuf traité par enzyme.
