The present invention provides a composition for beverage use characterized by comprising an acidic soluble protein, and one or two or more powdery or granular salts selected from alkali metal salts of organic acids and water-soluble basic salts, wherein at least the acidic soluble protein is granulated. Furthermore, the present invention provides a process for producing a composition for beverage use containing an acidic soluble protein, characterized by comprising: adding one or two or more powdery or granular salts selected from alkali metal salts of organic acids and water-soluble basic salts in a proportion of 0.01 to 10 parts by weight with respect to 100 parts by weight of an acidic soluble protein, and subjecting at least the acidic soluble protein to granulation. In the composition for beverage use, the formation of undissolved lumps when the composition is dissolved in water is suppressed.
L'invention porte sur une composition de boisson, caractérisée par le fait qu'elle contient une protéine soluble acide et un ou plusieurs sels en poudre ou en granulés choisis parmi des sels métalliques alcalins d'acides organiques et des sels basiques solubles dans l'eau. La composition de boisson est également caractérisée en ce qu'au moins la protéine soluble acide est granulée. L'invention porte également sur un procédé pour produire une composition de boisson contenant une protéine soluble acide, lequel procédé est caractérisé en ce que de 0,01 à 10 parties en poids d'un ou plusieurs sels granulés ou en poudre choisis parmi des sels métalliques alcalins d'acides organiques et des sels basiques solubles dans l'eau sont ajoutées pour 100 parties en poids d'une protéine soluble acide, et qu'au moins la protéine soluble acide est granulée. La composition de boisson a une formation de grumeau supprimée lorsqu'elle est dissoute dans l'eau.
