An additive delivery laminate, suitable for cooking a food product and transferring a colorant, flavorant, and/or odorant to a food product, has an additive delivery layer comprising a thermoplastic layer and water-soluble granules containing a food additive. The laminate further comprises a substrate layer to which the additive delivery layer is bonded. The additive delivery layer is placed in contact with the food product to be packaged, with the granules thereafter dissolving and the additive being transferred to the food product. The additive can be transferred during cook-in or otherwise. Also disclosed is a process for preparing the additive delivery laminate and a process for preparing a packaged food product.
La présente invention concerne un stratifié à diffusion d'additif, adapté à la cuisson d'un produit alimentaire et au transfert d'un colorant, d'un aromatisant et/ou d'un odorisant vers le produit alimentaire. Le stratifié susmentionné comprend une couche de diffusion d'additif constituée d'une couche thermoplastique et de granulés hydrosolubles contenant un additif alimentaire. Le stratifié décrit dans cette invention comprend également une couche de substrat sur laquelle est collée la couche de diffusion d'additif. La couche de diffusion d'additif est mise en contact avec le produit alimentaire devant être emballé; les granulés se dissolvant par la suite et l'additif étant transféré vers le produit alimentaire. L'additif peut être transféré pendant la cuisson ou à un autre moment. Cette invention concerne également un procédé permettant de préparer le stratifié à diffusion d'additif, ainsi qu'un procédé permettant de préparer un produit alimentaire emballé.
